Coconut curry fried rice

Ingredients

  • 3 cups basmati rice
  • 2 cups coconut milk
  • 4 cups vegetable stock
  • 2 teaspoons Esmen’s Curry Powder
  • 2 medium onions – chopped
  • 2 medium carrots – grated
  • 2 tablespoons coconut oil
  • Salt to taste

Directions:

  1. In a medium pot, add rice, coconut milk, vegetable stock and salt.  Bring to boil, then turn down the heat to the lowest and cook for approximately 20 minutes or until rice is cooked.
  2. Leave the rice to cool.  (Best to cook rice overnight and leave it in the fridge)
  3. In a large pan heat the coconut oil, then add Esmen’s Curry Powder, onions, carrot, and sauté for about 5 minutes.
  4. Then add rice and stir until all the grains are coated with the curry powder.
