Curry Goat Shepherd’s Pie

Ingredients

  • 3 lbs boneless goat meat – cut in small pieces
  • 1 tablespoon all-purpose seasoning
  • 1 teaspoon lemon & herb seasoning
  • 1 teaspoon garlic & herb seasoning
  • 2 tablespoons Esmen’s Curry Powder
  • 1 tablespoon Esmen’s Curry Marinade (see recipe on www.esmenscurrypowder.com)
  • 3 tablespoons oil
  • Salt & Pepper to taste
  • 2 medium onion – chopped
  • 3 stalks green onion – chopped
  • 4 cloves garlic – chopped
  • 4 sprigs fresh thyme
  • 2 medium bell peppers – chopped
  • Scotch bonnet pepper to taste

Instructions:

  1. Season goat meat with 1 tablespoon Esmen’s Curry Powder, Esmen’s Curry Marinade, all-purpose seasoning, lemon & herb seasoning, garlic & herb seasoning, salt, and pepper. (Marinate for 2 hours or more if you have the time)
  2. On the stovetop, heat the oil in a medium cooking pot with cover.
  3. Add 1 teaspoon of Esmen’s Curry Powder to infuse the oil.
  4. Add the seasoned goat meat, stirring occasionally for about 7 – 10 minutes.
  5. Then add onion, green onion, garlic, bell peppers, fresh thyme and scotch bonnet pepper and stir together for a couple minutes.
  6. Cover pot and cook on low heat for about 40 minute or until goat meat is cooked to a soft and tender texture.

Mashed Potatoes

Ingredients

  • 5 – 6 large potatoes – cut in small chunks
  • 1/3 cup butter
  • ½ cup heavy cream
  • 3 cloves garlic – crushed
  • 2 tablespoons fresh parsley – finely chopped
  • 1 cup vegetable stock
  • 4 cups water
  • Salt to taste

Instructions:

  1. In a large pot, over medium heat, bring the water and vegetable stock to boil. Then add the potatoes and cook until fork tender.
  2. While the potatoes are boiling, melt butter, add garlic and stir for a couple of minutes.  Next add the heavy cream and stir together for about 3 minutes. Then add the parsley.
  3. Remove potatoes and crush them in a large bowl. Then add your butter cream sauce and mix thoroughly.
  4. Heat oven to 400 F degrees.
  5. In a large casserole dish, add the cooked curry goat.  Next layer the mashed potatoes evenly on top.
  6. Bake in the oven for approximately 25 minutes or until golden brown.

NOTE: If necessary, broil for the last few minutes to help the surface of the mashed potatoes brown.
