Ingredients
- 3 halibut steak
- 1 medium onion – Chopped
- 4 cloves garlic – Crushed
- 1 medium bell pepper – Chopped
- 3 sprigs fresh thyme – Chopped
- 2 stalks green onion – Chopped
- 2 tablespoon coconut oil
- ½ cup coconut milk
- 1 tablespoon Esmen’s Curry Powder
- All purpose seasoning
- 1 teaspoon old bay seasoning
- Salt and pepper to taste
Directions
- Season fish with salt, pepper, 1 teaspoon Esmen’s Curry Powder, all purpose seasoning, old bay seasoning and set aside
- In a large saucepan heat coconut oil, then add 1 teaspoon Esmen’s Curry Powder
- Next add the onion, garlic, bell pepper, thyme and sauté for about 5 minutes
- Add the coconut milk and cook on low heat for about 7 to 10 minutes
- Next add the fish and cook for another 10 minutes or until cooked
