Ingredients
- 3 large, sweet potatoes – cut into slices
- 2 – 3 tbsp olive oil
- 2 tsps Esmen’s Curry Powder
- 1 tsp Trader Joe’s 21 Seasoning Salute
- 1 tsp Paprika
- 1 tsp Cayenne Pepper
- Salt to taste
- ½ cup mango chutney
- ¼ cup pomegranate
- ¼ cup dried cranberries
- ¼ cup pumpkin seeds
Instructions:
- Heat oven to 350 degrees.
- In a large bowl mix together sweet potatoes, olive oil, Esmen’s Curry Powder, Trader Joe’s 21 Seasoning Salute, paprika, cayenne pepper and salt.
- Place the seasoned sweet potatoes on a baking tray and bake for approximately 15 – 20 minutes on each side.
- Brush with mango chutney while baking.
- Garnish with cranberries, pumpkin seeds, and pomegranate.
