Ingredients
- 2 large sweet potatoes, chopped into cubes
- 1 tablespoon coconut oil
- 1 tablespoon butter
- 2 teaspoons Esmen’s Curry Powder
- 1 teaspoon Trader’s Joe 21 Salute
- Salt & Pepper to taste
Instructions:
- Preheat the oven to 375 degrees.
- On the stovetop, in a medium size pan, heat the coconut oil.
- Then add Esmen’s Curry Powder and mix to infuse the oil.
- Now add the sweet potatoes and stir together for a minute to ensure they are coated with the curry powder.
- Add salt, pepper, Trader’s Joe 21 Salute and butter, then stir together for approximately 3 minutes.
- Next, transfer to a baking tray and bake in the oven for about 30 minutes or until the sweet potatoes are cooked.
