Ingredients

  • 12 lbs whole turkey (brined – you can use any brine method)
  • 8 oz melted butter
  • 1 cup Esmen’s Curry Marianade (see recipe on website)
  • 1 tbsp black pepper
  • 1 tbsp garlic and herb dry seasoning
  • 1 tbsp lemon and herb dry seasoning
  • 1 tsp Trader’s Joe’s 21 Seasoning Salute

Instructions:

  1. Rinse turkey and pat dry.
  2. Spatchcock the turkey (remove the backbone).
  3. Brush the butter on the turkey.
  4. Combine the dry seasoning and rub all over the turkey.
  5. Then add Esmen’s Curry Marinade and rub all over the turkey.
  6. Cover and leave in the fridge overnight to marinate.  Or you can marinate for about 4 hours if you don’t have the time to leave it overnight.
  7. Remove turkey from the fridge and preheat the oven to 400 degrees.
  8. Add turkey to the baking tray and cook for 30 minutes.
  9. Reduce temperature to 350 degrees and roast turkey in the oven until cooked (internal temperature reaches 165 degrees).
