Coconut Curry Chickpeas

Ingredients

  • 1 tbsp coconut oil
  • 1 large onion – chopped
  • 1 large tomato – chopped
  • 2 cloves garlic – crushed
  • 1 inch ginger – grated
  • 1 tsp Esmen’s Curry Powder
  • ¼ tsp cayenne pepper
  • 1 cup coconut milk
  • 1 can chickpeas – drained
  • Salt and pepper to taste
  • 1 tsp Trader Joe’s 21 Seasoning Salute

Instructions:

  1. Heat coconut oil in a saucepan over medium heat
  2. Add onion, ginger, garlic, salt, pepper, and Trader Joe’s 21 Seasoning Salute then sauté for about 5 minutes.
  3. Add tomato and sauté for another 3 minutes.
  4. Add Esmen’s Curry Powder and sauté for another 2 minutes
  5. Add chickpeas and cook for another 5 minutes, stirring intermittently.
  6. Then add coconut milk and cook on low heat for another 10 minutes.
