Ingredients

  • 2 lbs. cod filets
  • 2 -3 cloves of garlic, crushed
  • 2 shallots, finely chopped
  • 1 inch ginger, grated
  • ½ cup leek, finely chopped
  • 1 – 2 cups spinach, chopped
  • 2 bay leaves
  • 2 cups coconut milk
  • 2 teaspoons honey
  • 2 teaspoons red pepper paster
  • 1 tablespoon green Thai curry paste
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon all-purpose seasoning
  • 1 teaspoon fish seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 3 teaspoons Esmen’s Curry Powder
  • Salt and pepper to taste

Instructions:

  1. Season fish with all-purpose seasoning, fish seasoning, garlic powder, onion powder, salt, and pepper.
  2. Heat butter in a large saucepan over medium heat, then add the olive oil.
  3. Add the garlic, shallot, ginger and leek and sauté for approximately 3 minutes.
  4. Next add Esmen’s Curry Powder and stir together for another 1 minute.
  5. Add the 1 cup coconut milk and cook for about 3 minutes.
  6. Cool and blend.
  7. Add the blended coconut sauce back to saucepan.
  8. Then add a bay leaf, honey and green Thai curry and cook for another 2 – 3 minutes.
  9. Now add the seasoned fish and cook for another 5 to 7 minutes or until fish pieces are cooked.
  10. Add spinach and stir together for another 30 seconds.

Serve with your favourite side and vegetables.
