Pan fry curry fish in a garlic butter sauce

Ingredients

  • 4 (4 – 6 ounce) white fish filets
  • Juice from 1 lemon
  • 2 -3 cloves of garlic, crushed
  • Handful of fresh parsley, finely chopped
  • 4 tablespoons butter
  • 1 tablespoon olive oil
  • 1 cup flour
  • ½ cup cornstarch
  • 1 teaspoon all-purpose seasoning
  • 1 teaspoon fish seasoning
  • 1 tablespoon olive oil
  • 3 teaspoons Esmen’s Curry Powder
  • Salt and pepper to taste

Instructions:

  1. Season fish with lemon juice, salt and pepper
  2. In a large bowl, add the flour, cornstarch salt, pepper, all-purpose seasoning, fish seasoning, Esmen’s Curry Powder and mix.
  3. In a large pan over medium heat, melt 2 tablespoons of the butter.  Then add olive oil to prevent the butter from turning brown.
  4. Add fish pieces to flour mixture and ensure it is fully coated, then shake off excess flour.
  5. Add the floured fish pieces to the frying pan and cook on both sides for 3 – 4 minutes.

Garlic butter sauce

  1. In a small pan over medium heat, melt 2 tablespoons of the butter.  Then add the garlic and stir together for about 2 minutes.
  2. Then add the parsley and stir together for another 1 minute.
  3. Then brush the fried fish pieces with the garlic butter sauce.

Serve with your favourite side and vegetable.
