Ingredients
- 2 lbs. cod filets
- 2 -3 cloves of garlic, crushed
- 2 shallots, finely chopped
- 1 inch ginger, grated
- ½ cup leek, finely chopped
- 1 – 2 cups spinach, chopped
- 2 bay leaves
- 2 cups coconut milk
- 2 teaspoons honey
- 2 teaspoons red pepper paster
- 1 tablespoon green Thai curry paste
- 3 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon all-purpose seasoning
- 1 teaspoon fish seasoning
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 3 teaspoons Esmen’s Curry Powder
- Salt and pepper to taste
Instructions:
- Season fish with all-purpose seasoning, fish seasoning, garlic powder, onion powder, salt, and pepper.
- Heat butter in a large saucepan over medium heat, then add the olive oil.
- Add the garlic, shallot, ginger and leek and sauté for approximately 3 minutes.
- Next add Esmen’s Curry Powder and stir together for another 1 minute.
- Add the 1 cup coconut milk and cook for about 3 minutes.
- Cool and blend.
- Add the blended coconut sauce back to saucepan.
- Then add a bay leaf, honey and green Thai curry and cook for another 2 – 3 minutes.
- Now add the seasoned fish and cook for another 5 to 7 minutes or until fish pieces are cooked.
- Add spinach and stir together for another 30 seconds.
Serve with your favourite side and vegetables.
