Ingredients
- 1 tbsp coconut oil
- 2 medium carrots shredded
- 2 cups rice (washed and drained)
- 1 medium onion chopped
- 2 ½ tsp Esmen’s Curry Powder
- 1 tsp salt
- 1 tsp butter
- 2 cups vegetable broth
- 2 cups water
- Fresh parsley or cilantro for garnish chopped
Instructions
- Heat coconut oil in large pot over medium heat
- Add the onion and sauté for 2 minutes
- Add Esmen’s Curry Powder and sauté for another 2 mins
- Then add rice and stir until the curry powder is evenly distributed on all the grains
- Add vegetable broth and water and stir together
- Then add salt and butter and stir together and bring the water and vegetable broth to boil
- Cover pot and cook on low heat for about 15 mins
- Then add carrots and stir in with a fork and cook for another 5 mins
- Garnish with the fresh parsley or cilantro and serve with your favourite protein
