Ingredients
- 12 lbs whole turkey (brined – you can use any brine method)
- 8 oz melted butter
- 1 cup Esmen’s Curry Marianade (see recipe on website)
- 1 tbsp black pepper
- 1 tbsp garlic and herb dry seasoning
- 1 tbsp lemon and herb dry seasoning
- 1 tsp Trader’s Joe’s 21 Seasoning Salute
Instructions:
- Rinse turkey and pat dry.
- Spatchcock the turkey (remove the backbone).
- Brush the butter on the turkey.
- Combine the dry seasoning and rub all over the turkey.
- Then add Esmen’s Curry Marinade and rub all over the turkey.
- Cover and leave in the fridge overnight to marinate. Or you can marinate for about 4 hours if you don’t have the time to leave it overnight.
- Remove turkey from the fridge and preheat the oven to 400 degrees.
- Add turkey to the baking tray and cook for 30 minutes.
- Reduce temperature to 350 degrees and roast turkey in the oven until cooked (internal temperature reaches 165 degrees).
