Ingredients:
- 1 tbsp olive oil
- ¼ cup yellow onion, chopped
- 2 cloves garlic, minced
- 1 ½ tsp Esmen’s Curry Powder
- ¾ cup plain Greek yogurt
- 2 tbsp tahini
- 2 tbsp honey
- ½ tsp lime juice
- Dash of smoked paprika
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a skillet for 1 minute.
- Add onion and cook for about 3 minutes.
- Then stir in garlic, curry powder, and cook for another 1 minute.
- Transfer to the single serving cup for your blender and allow to cool for about 5 minutes.
- Next add the rest of the ingredients to the blender cup and puree until smooth.
- Store in an airtight container in the fridge.
