Ingredients
- 4 (4 – 6 ounce) white fish filets
- Juice from 1 lemon
- 2 -3 cloves of garlic, crushed
- Handful of fresh parsley, finely chopped
- 4 tablespoons butter
- 1 tablespoon olive oil
- 1 cup flour
- ½ cup cornstarch
- 1 teaspoon all-purpose seasoning
- 1 teaspoon fish seasoning
- 1 tablespoon olive oil
- 3 teaspoons Esmen’s Curry Powder
- Salt and pepper to taste
Instructions:
- Season fish with lemon juice, salt and pepper
- In a large bowl, add the flour, cornstarch salt, pepper, all-purpose seasoning, fish seasoning, Esmen’s Curry Powder and mix.
- In a large pan over medium heat, melt 2 tablespoons of the butter. Then add olive oil to prevent the butter from turning brown.
- Add fish pieces to flour mixture and ensure it is fully coated, then shake off excess flour.
- Add the floured fish pieces to the frying pan and cook on both sides for 3 – 4 minutes.
Garlic butter sauce
- In a small pan over medium heat, melt 2 tablespoons of the butter. Then add the garlic and stir together for about 2 minutes.
- Then add the parsley and stir together for another 1 minute.
- Then brush the fried fish pieces with the garlic butter sauce.
Serve with your favourite side and vegetable.
