Coconut Curry Chickpeas
Ingredients
- 1 tbsp coconut oil
- 1 large onion – chopped
- 1 large tomato – chopped
- 2 cloves garlic – crushed
- 1 inch ginger – grated
- 1 tsp Esmen’s Curry Powder
- ¼ tsp cayenne pepper
- 1 cup coconut milk
- 1 can chickpeas – drained
- Salt and pepper to taste
- 1 tsp Trader Joe’s 21 Seasoning Salute
Instructions:
- Heat coconut oil in a saucepan over medium heat
- Add onion, ginger, garlic, salt, pepper, and Trader Joe’s 21 Seasoning Salute then sauté for about 5 minutes.
- Add tomato and sauté for another 3 minutes.
- Add Esmen’s Curry Powder and sauté for another 2 minutes
- Add chickpeas and cook for another 5 minutes, stirring intermittently.
- Then add coconut milk and cook on low heat for another 10 minutes.
