Curry Chicken Sandwich

Ingredients

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon all purpose seasoning
  • 1 teaspoon 21 seasoning salute (Trader Joe’s)
  • 1 ½ teaspoon Esmen’s Curry Powder
  • Salt and pepper to taste
  • Lettuce Leaves
  • 6 slices Bread of your choice – toasted

Salad mixture

  • ½ red thinly sliced apple
  • ¼ cup cranberries
  • ¼ cup thinly sliced celery
  • 2 teaspoons thinly sliced green onions
  • 1 cup mayonnaise
  • 2 teaspoons lime juice
  • 1 teaspoon Esmen’s Curry Powder

Method

  1. Season chicken breast with all purpose seasoning, 21 seasoning salute, 1 teaspoon Esmen’s Curry Powder, salt, and pepper, then set aside.
  2. Heat olive oil in a large pan with over medium heat. (Ensure the pan has a cover)
  3. Add ½ teaspoon of Esmen’s Curry Powder to oil and stir for 30 seconds.
  4. Add chicken breast and cook on 1 side for 2 minutes, then turn onto the next side, cover the pan and cook on the lowest heat for 20 minutes.
  5. Once cooked, cool for about 3 minutes and then cut into small pieces.
  6. While the chicken is being cooled, toast the bread slices.

Salad mixture

While chicken is cooking, mix all ingredients together in a bowl and set aside.

Assemble Sandwich

  1. Place lettuce on bread slices.
  2. Top with salad mixture, then chicken.

Serve with some fried plantains for a treat
